The Prisoner Wine Company, founded by winemaker Dave Phinney in Napa Valley, is known for its distinctive approach to winemaking. Their flagship wine, The Prisoner, has gained attention for its blend of varietals. Each wine in their collection offers something different, combining various elements to create bold, complex flavors. The winery’s innovative approach has earned it a dedicated following.

 

The Callisto culinary team has crafted a menu to complement these wines, with dishes like Ahi Tuna Tataki and Cardamom spiced Angus Striploin. This menu aims to highlight the character of The Prisoner Wine Company’s wines, offering a memorable dining experience.
